Ingredients

For this recipe, you will need the following ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tomato, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron
  • 1 cup arborio rice
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 1/2 pound chicken breasts, cut into small pieces
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound chorizo, sliced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

1. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 3-4 minutes until the onion is translucent. 2. Add the red and green bell peppers, and sauté for another 2-3 minutes until they are slightly softened. 3. Add the chopped tomato, smoked paprika, and saffron. Stir well to combine and cook for another 2-3 minutes. 4. Add the arborio rice to the pan and stir to coat it with the vegetables and spices. 5. Pour in the chicken broth and white wine, and stir well. Bring the mixture to a boil, then reduce the heat to low and cover the pan. 6. Allow the rice to simmer for 15-20 minutes, or until it is cooked through and the liquid has been absorbed. 7. While the rice is cooking, season the chicken pieces with salt and pepper. In a separate pan, sauté the chicken until it is cooked through and no longer pink. 8. Remove the chicken from the pan and set it aside. In the same pan, sauté the shrimp until they are pink and cooked through. 9. Remove the shrimp from the pan and set them aside. In the same pan, sauté the chorizo until it is browned and crispy. 10. When the rice is cooked, add the chicken, shrimp, and chorizo to the pot. Stir well to combine and heat through. 11. Serve the paella hot, garnished with lemon wedges.
