Introduction

Red velvet cupcakes are a classic dessert that has been enjoyed for generations. The delightful blend of cocoa and buttermilk gives these cupcakes their signature flavour and moist texture. These cupcakes are perfect for any occasion and are sure to be a hit with everyone.

Ingredients

To make 12 cupcakes, you will need the following ingredients: - 120g plain flour - 1 tablespoon cocoa powder - 1/2 teaspoon baking powder - 1/4 teaspoon bicarbonate of soda - 1/4 teaspoon salt - 50g unsalted butter, at room temperature - 150g caster sugar - 1 large egg - 1/2 teaspoon vanilla extract - 120ml buttermilk - 1 tablespoon red food colouring

For the cream cheese frosting:

- 50g unsalted butter, at room temperature - 100g icing sugar - 125g cream cheese, at room temperature

Instructions

1. Preheat your oven to 180°C and line a muffin tin with 12 paper cases. 2. In a medium-sized bowl, mix together the flour, cocoa powder, baking powder, bicarbonate of soda and salt. 3. In a separate bowl, cream the butter and sugar together until light and fluffy. 4. Add in the egg and vanilla extract, and mix until well combined. 5. Gradually add in the dry ingredients, alternating with the buttermilk until everything is well combined. 6. Stir in the red food colouring until the mixture is evenly coloured. 7. Divide the mixture evenly between the 12 paper cases. 8. Bake for 18-20 minutes or until a toothpick inserted into the centre of a cupcake comes out clean. 9. Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. 10. While the cupcakes are cooling, make the cream cheese frosting. 11. In a medium-sized bowl, cream the butter and icing sugar together until light and fluffy. 12. Add in the cream cheese and mix until well combined. 13. Once the cupcakes are completely cool, pipe or spread the cream cheese frosting onto each cupcake. 14. Serve and enjoy!
