Ingredients:

  • 1.5 kg of smoked gammon joint
  • 1 onion, chopped
  • 2 bay leaves
  • 2 cloves of garlic, minced
  • 2 tablespoons of black treacle
  • 2 tablespoons of cider vinegar
  • 1 tablespoon of English mustard powder
  • 1 tablespoon of soft brown sugar
  • 1 tablespoon of honey
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground cloves
  • 1 teaspoon of ground nutmeg
  • 1 orange, zested and juiced
  • Water, enough to cover the gammon joint

Instructions:

  1. Preheat the oven to 180°C (160°C fan)/gas mark 4.
  2. In a large pan, add the smoked gammon joint, chopped onion, bay leaves and minced garlic.
  3. Cover the gammon joint with water and bring to the boil.
  4. Reduce the heat and simmer for 1 hour.
  5. Take the gammon joint out of the pan and remove the skin leaving a layer of fat.
  6. Score the fat in a diamond pattern with a sharp knife.
  7. In a bowl, mix together the black treacle, cider vinegar, English mustard powder, soft brown sugar, honey, ginger, cinnamon, cloves, nutmeg, orange zest and juice.
  8. Brush the mixture over the gammon joint and place it in a roasting tin.
  9. Cover the roasting tin with foil and roast in the preheated oven for 30 minutes.
  10. Remove the foil and roast for another 30 minutes or until the gammon is golden and sticky.
  11. Remove the gammon from the oven and let it rest for 10 minutes before carving.
