The Ultimate Biryani Veg Recipe
Introduction
Biryani is a popular Indian dish that is known for its aromatic blend of spices and flavors. It is a complete meal that can be enjoyed with raita or any vegetable side dish. - 2 cups basmati rice
- 3 cups water
- 2 bay leaves
- 4 green cardamom pods
- 4 cloves
- 1 cinnamon stick
- 1 tsp cumin seeds
- 1 onion, sliced
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 green chili, sliced
- 2 cups mixed vegetables (carrots, peas, beans, potatoes)
- 1/2 cup plain yogurt
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Wash the rice in cold water until the water runs clear. Soak the rice in water for 20 minutes.
- In a large pot, bring 3 cups of water to a boil. Add the bay leaves, cardamom pods, cloves, cinnamon stick, and cumin seeds.
- Drain the soaked rice and add it to the pot. Stir well and reduce the heat to low. Cover the pot and cook the rice for 15 minutes or until it is fully cooked.
- In a separate pan, heat 2 tbsp of oil over medium heat. Add the sliced onions and fry until they turn golden brown.
- Add the ginger paste, garlic paste, and green chili to the pan. Fry for a minute.
- Add the mixed vegetables to the pan and fry for 5 minutes.
- In a bowl, mix the yogurt, red chili powder, turmeric powder, and garam masala.
- Add the yogurt mixture to the pan and stir well. Cook for 5 minutes.
- Add salt to taste.
- Mix the cooked rice with the vegetable mixture.
- Garnish with fresh cilantro.
- Serve hot with raita or any vegetable side dish of your choice.
