Ingredients:

For the cupcakes:

For the frosting:

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Food coloring (optional)

Instructions:

For the cupcakes:

1. Preheat the oven to 350°F. Line a standard muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 3 minutes.

4. Add the eggs, one at a time, beating well after each addition.

5. Beat in the vanilla extract.

6. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

7. Divide the batter evenly among the prepared muffin cups.

8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
