For this recipe, you will need the following ingredients:
300g of linguine
1 large courgette
1 red onion
2 cloves of garlic
2 lemons
1 pack of Waitrose & Partners Scottish Salmon Fillets
1 pack of Waitrose & Partners Baby Plum Tomatoes
1 bunch of fresh parsley
1 pack of Waitrose & Partners Parmigiano Reggiano
4 tbsp of olive oil
Salt and pepper to taste
Instructions
1. Begin by preheating your oven to 200°C (180°C fan)/gas mark 6. 2. Cut the courgette into thin slices and the red onion into wedges. Crush the garlic cloves and chop the parsley. 3. Cut the lemon into wedges and remove any seeds. 4. On a lined baking tray, place the courgette, red onion, and garlic. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Roast in the oven for 20 minutes. 5. While the vegetables are roasting, cook the linguine in boiling salted water for 10-12 minutes or until al dente. 6. Once the linguine is cooked, drain and reserve 150ml of the pasta water. 7. In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Place the salmon fillets skin-side down in the pan and cook for 4-5 minutes or until the skin is crispy. 8. Turn the salmon fillets over and add the roasted vegetables, baby plum tomatoes, and reserved pasta water to the frying pan. Cook for a further 2-3 minutes. 9. Add the linguine to the frying pan and toss everything together. 10. Squeeze the lemon wedges over the pasta and top with chopped parsley and grated Parmigiano Reggiano. 11. Serve and enjoy!
