Instructions
Step 1: Make the sponge cakePreheat the oven to 350°F (180°C). Grease and flour an 8-inch cake pan. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely. Step 2: Make the custard
In a medium saucepan, heat the milk and sugar over medium heat until the sugar dissolves. In a separate bowl, whisk together the egg yolks, cornstarch, and vanilla extract. Gradually pour the hot milk mixture into the egg mixture, whisking constantly. Pour the mixture back into the saucepan and cook over medium heat, whisking constantly, until the custard thickens and coats the back of a spoon. Remove from heat and let cool. Step 3: Assemble the trifle
Cut the sponge cake into small cubes and place them in the bottom of a large glass bowl. Drizzle the sherry over the cake cubes. Add a layer of mixed berries on top of the cake.
